X Factor

Chef Liam Malcolmson, a former colleague of Silver Swan's was lucky enough to be able to work in the judges houses on X Factor a few weeks.

Whose house? . . . well if anyone watched the show on Sunday you will know that it was Louis Walsh who has a house in St Tropez  . . . and this was where Liam happened to be located in the world so the two forces combined (watch out for Liam on TV  . . not sure if he got through lol)

Liam has done may ski and summer seasons - Silver Swan had 5 questions to aim at him, see the full interview below:


1. How did you end up on this amazing job? 
I was contacted by a colleague who was asked by the owners of the villa to find a chef. They needed a professional chef as the job consisted of cooking for 50 crew for lunch and dinner, while also creating a more formal fine dining Breakfast,Lunch and Dinner for 15 executives including Louis, Dermot, Shane, Nicola, Sinita and the exec producer of Thames TV.



2. What's your past experience?
My career started in Cornwall and for 14 years I worked at some of the top local Restaurants and Hotels. Then in a change of direction I started working abroad, for 5 years I've spent my winter seasons in the Alps in some of the best chalets in the world and working the summer months in St Tropez at Private villas as a personal chef.



3. Where is your favourite place to work in the world?  
It depends on the time of year. With the nature of my work it is difficult to have one place I can call my favourite. I move with the seasons and get to see the best of each destination I go and that makes each place a favourite to me.



4. Do you prefer snow or sun 
I prefer the snow in the winter and the sun in the summer. At the end of each season there is always the anticipation of the next one to come.



5. What's your next master plan?
My next plan in the short term is the winter back to the Val d'Isere in the Alps. At the same time creating a website and my own brand, while developing my portfolio and client list.
