Marrying a Chef?

If you have worked in a chalet during a ski season before I am sure you have been on the end of a chefs bad day, being screamed at for the simplest things, not describing his 'jus' in the correct way, being in 'his' kitchen when you shouldn't be and just generally doing everything possibly wrong!

But then on his good days, he will cook you the most amazing food, have a giggle and laugh with you and be quite a pleasant human.

Silver Swan read 'Marrying a Chef'' by blogger 'Chef and Steward' and wanted to share it with you.
It all makes perfect sense to us. . . . here 'chef' blogger is writing about all the things 'wife' will go through in their wedded relationship:

  1. You will be alone most of the time.
  2. You have got to have your own life. Having your own identity is essential in every relationship but being independent is even more critical when you are married to a person who you will hardly ever see.
  3. If you cannot approach the holidays, Valentines and special occasions like a single person, look the other way. Special occasions are when chefs work. You will stand alone under the mistletoe and New Year’s Eve will find you alone.  Guaranteed.
  4. There is nothing glamourous about being a working restaurant chef. Forget what you see on TV, real chefs have long, tough hours day in and day out and come home smelling from anything from smoke, to onions to fish.
  5. Most chefs have no desire to cook at home. Just think of the prostitute who is expected to put out after a hard days work.
  6. We talk about amuse bouche in our sleep. Or waiters picking up the orders, or new menus or just food.
  7. We work long hours everyday. This is not an occasional late night in the office. This is  daily hard, rough and tough back-breaking hours that would make cowards cry.
  8. It takes a long time in the trenches and most chefs never get to seniority. If you are looking for fame, marry an already famous movie star or go on Jerry Springer. If you  are looking to get rich quick, join a Ponzi scheme.
  9. We really don’t feel like talking about “feelings” when we get home 2:00a.m. and we will try as best as possible, but sometimes, we will just start snoring.
  10. You have to learn when to talk like a short order cook because we will not have leisure time to just talk. Think of telegrams of the old says. Say it quick and short and make every word count.
  11. Do not call us in service unless it is important. No we cannot just disappear from the kitchen during service to talk for 10 minutes.
  12. You will eat dinner alone at least 5x per week. And breakfast.
  13. You will be criticized for your cooking as if you were a rookie apprentice commis chef. We just can’t help it sometimes.
  14. We love when you cook for us. Just don’t bother during work days because we are too tired most times.
  15. If you are going to cook something, call us or SMS us and let us know. That way, we will not eat staff dinner.
  16. We are passionate.  We can’t help it. Passion is the blood than runs through our veins. This is not a job for the feint-hearted and passionless… it is for the one who truly loves his/her craft and lives and breathes for it (and even dreams about it see #6  )
  17. For the same reason, we marry for love. However, if your dowry includes the cash to open our own restaurant, that wouldn’t hurt either. Just saying.
  18. Our marriages are hard, and some don’t make it, but they are important to us.
  19. When we are off work, we are often just tired, sleep  all day  or watch TV and get grumpy. Just ignore us. No joke. We really wish you would. Life is just better that way.
  20. Do not get in our way in the weeks leading up to a new menu or months leading up a restaurant or hotel opening. Really bad idea.
  21. You will have to handle most of the housekeeping matters.  Refer to #7 and #19.
  22. We are romantics. There goes that passion again. We will surprise you just when you least expect it.
  23. Chefs support each other, and good chefs get treated well by wait staff.  That means that every time we dine together, you will be treated like royalty. Enjoy the perks. You deserve it.
  24. When we cook for you at home, you will fall in love all over again.  Just like you did the first time. Exceptions made in #27.
  25. We tend to be a little cocky.  It comes with the territory. Even females chefs. Female chefs kick ass!
  26. You should love food. If we live and breathe it and you cannot stand it, there will eventually be a  legal paper filed at some point due to “irreconcilable differences.”
  27. You have to have a sense of adventure. You will be our guinea pig. We may work on a recipe repeatedly from home until we get it right. We may make things you do not like in the process. It comes with the territory.
  28. As a result of our own strife for perfection, we will always be telling you how you can improve your recipes. Grow a tough skin or just put us in our place. Or blog complaining about it like my wife did.
  29. If you think that your life will consist of restaurant food daily, think again. When we are at home, we want good home-cooked food.
  30. If we do the grocery shopping, expect the bill to be much higher than if you did it alone. Yes we must buy that expensive carton of French cream and no, we cannot substitute.  That applies for every basic ingredient. Forget about home economics, we are expressing our love.
  31. You will eat some of your richest, most delicious meals at home when we actually do some grocery shopping and cook at home  (not often) that will make you forget about the price of the cream.
  32. You are likely a great person and bring balance and stability to our lives. We have seen something in you worth keeping.  If you have never worked in the food and beverage industry or hospitality, do some research and find out from other people what to expect.  If you can handle it, we promise you the ride of your life!  I really hope you still marry that man- he certainly needs a good woman!

Job of the week . . . .

Still looking for season work? Just because the snow is falling and some chalet companies are in the middle or training, don't think it is too late to jump on a plane and find your dream job.

This week's job of the week is: Head of Childcare in Sainte Foy. 



What an incredible opportunity right? Head up a team on nannies whilst being entwined in a winter wonderland.

First things first, what experience do you need to have? The ideal candidate should have previous experience in childcare and staff management, you will be responsible for the day to day running of the crèche and the management of x4 other nannies. You will also need to have a CRB certificate and be trained in First Aid.

Working as part of a team is a key attribute to this role.

Role responsibilities:

-  Deliver professional childcare services to all booked guests

-  Ensure children’s developmental, physical and emotional needs are met through age and stage appropriate play and activities, according to the weather giving the children an appropriate balance of indoor and outdoor activities

 -  With the Staff Chef provide adequate nutritional meals, drinks and snacks for the children in your care, with consideration to special dietary requirements

 -  Ensure the crèche is opened and closed at the agreed times as instructed by the Resort Manager

Direct Guest Services Performed:

-  Co-ordinated by the Chalet Managers, take part in the pre-holiday telephone call to the guests one week prior to their visit

  -  Read through guest childcare forms and ensure that any outstanding queries with regard to care arrangements are raised so you are able and informed to carry out your childcare duties.
                        
-  Attend Guest Briefing Sessions, as required, on the guests’ first night of stay to discuss their stated childcare arrangement requirements and clarify any queries with regard to the care and dietary requirements

What would your typical day be?

 -  Provide childcare between hours agreed with guest parents, but usually between 8:00am and 6:00pm


 Deliver and collect children from ski lessons at the appropriate times, as required by the parents
-  For younger children on the nursery slopes or other accessible areas, discreetly monitor the children during initial ski lessons to ensure their welfare and enjoyment
 -  Deliver and collect children from agreed meeting points in the resort, as required by the parents
-  Co-ordinated with the Staff Chef, provide lunch (at 12:30)
 -  Hand over children to parents between 5:00pm and 5:30pm during afternoon tea
-  According to rota, supervise an early evening DVD session from 6:00pm – 8:00pm
-  Co-ordinate and take part in a weekly afternoon event for children, such as sledging races
-  When possible, take photographs of children in care to be distributed to parents with certificates on the final evening of their holiday
 -  Co-ordinate and provide evening babysitting as agreed with parents at the agreed hourly rate ensuring you have planned and discussed evening activities and bedtimes
 -  Adapt to other childcare requests as appropriate

Our 24 hour trip to Switzerland

Silver Swan Blogger Holly McQueen had a flying visit to Switzerland yesterday, unfortunately she was only there for 24 hours and didn't have chance to get her ski's out BUT she did encounter her first snow flakes of the season AND managed to get these lovely wintery snaps of Lake Annecy, Lake Lausanne and travels through Switzerland to Fribourg.

Whose in Courchevel this weekend?

Most seasonnaires are no doubt in the middle of training at the moment, or perhaps, being placed in your resort and chalet.

The question is . . . . how many of you will be in Courchevel this weekend?

Courchevel as a resort is not meant to open until the 7th December, that's 10 days away, however, the Saulire and Verdons lift will be running this Saturday so those of you itching to get out on the piste can have your kicks. 

Lifts opening so early is a first for Courchevel, in celebration, Saturday will be FREE to all guests along with parking!!!

Yes, its that time of the week again and this week we have positions for four high quality chefs in Meribel, Val d'Isere and Les Gets for one of the best ski companies in the French Alps.

Are you a chef looking to work in one of the most luxurious chalets in the Alps? Be able to design menu's around your clients requirements? Stick to a budget? Create a 7 course tasting menu or be happy enough to sit down with the kids and make a pizza? Build relationships with the local fish and meat suppliers?

You will be required to work 6 days a week producing breakfast, afternoon tea, canapés and evening meal.
Your food should be to a Michelin standard and you should take pride in your work.

Working as part of a team is crucial as you will be spending a lot of time with your colleagues.

MAIN RESPONSIBILITIES
  • tailored menu designing and planning for each group of guests
  • preparation and service of breakfast, afternoon tea, canapés, five course evening meal, ski room snacks, pre-dinner nibbles and after dinner petit fours
  • catering for all guests special dietary requirements
  • catering for all requests for special occasions
  • catering for children and nannies (including early lunches and dinners when required)
  • maintaining food hygiene, general health & safety standards in the kitchen and dining areas
  • keeping the kitchen clean, tidy and presentable at all times
  • assisting with the management of chalet food budgets
  • assisting with the maintenance of all kitchen facilities and equipment
  • planning and preparation of 2 x staff meals PER DAY
  • assisting with FOH duties when required
SKILLS & EXPERIENCE REQUIRED
This role would suit individuals with the following skill set:
  • recognised catering qualification or extensive experience
  • previous 5* catering experience is essential. Chalet catering experience is desirable.
  • good interpersonal skills
  • excellent time management and organisational skills
  • conversation French is desirable
  • previous experience catering for Russian/French clientele
  • full UK clean driving license is desirable

This weekend Great Britian Alpine Skiers Dave Ryding and Alex Tilley will be taking part in the Slalom World Cup in Levi, Finland.

Silver Swan would like to take the opportunity to wish our GB team good luck (and not to break any bones) especially to Dave Ryding who is running to compete at the Sochi 2014 Olymic Winter Games in February.

Ryding is currently the reigning Europa Cup Slalom Champion, the Slalom World Cup will be his first race of the European season.

Job of the week

This week our featured job is Resort Manager (Hotel & Restaurant) in Les Gets, France.



We are looking for someone to run a boutique hotel and restaurant in the centre of Les Gets, described as the ultimate piste side retreat with a funky urban interior and the latest in ski luxury, facilities include an outdoor hot tub, wet suite, sauna, massage room and piste side bar, terrace and restaurant.

The hotel sleeps upto 29 guests in 9 bedrooms.

The right candidate will have overall responsibility for the day to day activities of the Company in resort and will need to be very flexible. You will need to be confident and keep cool under immense pressure whilst maintaining a consistently positive outlook.

Winter season and hotel/ restaurant management experience together with a proven record in man management and organisational skills is essential. A good knowledge of French is also preferable.
You also need to have held a full driving license for at least three years.

An outline of duties will include:

Hotel:
- Effectively manage and oversee the hotel team
- Ensure outstanding customer service and guest satisfaction
- Maintain and develop good relations within resort with all existing and new supplier and owner contacts
- Quality control of all hotel standards including, food & beverage, cleaning budget control and in chalet service
- Preparation and organisation of transfer day
- Manage all resort vehicles
- Ensure all weekly paperwork is completed and complete resort accounts

Restaurant:
- Supervising and coordinating all restaurant staff
- Assisting any staff with their duties if required
- Maintaining good relationships with suppliers
- Dealing with customer complaints in the restaurant
- Responsibility for bank account, income, maintaining restaurant budgets, expenditure and receipts
- Working with the head chef maintaining correct stock levels and ordering of products
- Making accurate weekly accounting returns

Thought for the weekend!

Yes the season is finally upon us, the lifts in Verbier opened today and the snow is falling thick and fast across the Alps.

Some ski companies are still on the search for their final staff to complete the season and Silver Swan have been put in charge of making that happen. To make that happen we need your help. . . .

Are you heading out for a season and have friends at home jealous of your soon to be wobbly ski legs? Why not send them our way and receive a bottle of fizz if your friend is lucky enough to be placed.

Job of the week . . . . .

Silver Swan Recruitment's 'Job of the Week' is . . . .

Chalet host/ cook based in La Rosiere, France.

You will be solely responsible for running a premium chalet which is a 4 bed chalet sleeping 8 adults.
The chalet company have 6 other chalets in resort and a team of 9 staff so there will be plenty of people around to bounce off and socialise with. You will not be in a chalet working alone.

There is also chalet help who will pop into the chalet to assist when required.

If you are the right candidate for this role you will be confident at hosting and have good client interaction. You will be quick and efficient with housekeeping and most importantly a confident, passionate cook.

There is no set menu for this chalet, you will work alongside the director at the start of the season to create some menu options.

You will need to be professional but friendly with the confidence to manage all aspects of the chalet.

- The accommodation is live in.
- You do not need to be able to drive
- Pay is £90 per week with a £15 weekly bonus

How to Secure Work in the Ski Industry

Finding the perfect winter role can sometimes feel like finding a needle in a haystack. There are many different roles, in many different resorts which all have many candidates applying for them. Knowing where to start in securing a role is often the most difficult part so here are just some tips which will help you through this process.

RESEARCH

Before you start sending the same CV out to many different companies, stop and really think about what you want from your season. There is no point getting a job with a company that really doesn’t suit you in a role that you don’t enjoy. Would you rather a fairly lower level company where there may be other staff of the same age? Do you want to go higher end and gain some valuable 5* hospitality experience? Do you want a chalet/hotel/bar/restaurant environment? Also really think about what job would suit you; there is no point in you applying for the role of chef if you can’t cook. Have a think about your skills and previous experiences and be sensible in choosing the role to ensure you have what the recruiter is looking for. Then once you have a clear idea in your mind of the resort you’d like, the environment you’d like and what role you would be well suited to you can actually start researching the job market more effectively. There are some main websites which I can recommend you use as a starting block, these websites focus on winter season jobs so will have what you are looking for:

When you come across a job that on first glance seems suitable please don’t just hit apply. Stop and actually read the job description in full and please DO NOT apply if you clearly don’t have the experience that they are looking for. You are not only wasting your own time but the time of the employer.

Once you have fully read and understood the job description and feel competent that you could do the role then go and visit the company’s website. Get familiar with the product, have a look over the different resorts they operate in, the hotels/chalets in their portfolio and even have a look at the pricing to get a feel for the level of clientele they attract. It is also a good idea to look at the vacancy listings on the website as you may actually see a different role that is even more suited to you. Once you have completed this process in full then you should apply to the role but TAILOR your application. I can spot a well thought out application immediately and always prioritise them – so it is definitely worth the time.

COVER LETTER

Basically DO one!

And don’t send the exact same one to every employer under the sun; it is obvious when you do. I often get cover letters where the applicant has forgotten to change the name of the company or the job role that they are applying for. By tailoring your cover letter you can show that you have been on the website by specifying specific chalets that there or you the resorts we operate in. I want to read on a cover letter why you are interested in working for that company specifically, what is it that attracts you to them? Why you would be an asset to their company – outline your skills and experience and what you can bring to the role. Please don’t be tempted to list some adjectives:

‘I am hardworking, punctual, reliable, bubbly, dedicated, organised and proactive.’

Anyone can write these words but they are worthless if you can’t back them up. I want to see proof that you have these qualities. For example:

‘I am seen to be hard working in my current role which has been recognised by my recent promotion. I have never been late or not turned up to my shifts and have only taken 1 sick day in the last 5 years....etc.’

If you meet most of the requirements outlined in the job description except a couple of them then don’t just ignore that fact. The recruiter isn’t going to forget what they want for the role. The cover letter is your chance to address it and assure us that you will still be able to perform the job well in spite of it. For example, if you need to have previous driving experience in snowy conditions but you haven’t actually got this experience then say that whilst you lack this experience you have had years of driving experience in France, in different types of vehicles and that you are confident that you will get used to the conditions very quickly. A cover letter is your chance for the recruiter to get to know you better and for you to convince them that you are the best person for the job. It strengthens every application so well worth the effort.

WRITING YOUR CV

This is very much dependent on the recruiters preference, we all like different layouts and different content. But there are general points to note which are important to every employer.
The first thing I look for is Personal Details so having this first does always work for everyone. I don’t need to know absolutely everything here so don’t go into too much detail but your name, address and contact details. Some candidates aren’t comfortable putting their DOB on, which is fine, but then be conscious of the amount of career history you chose to have there. You aren’t hiding much by not putting your DOB if you then put 30 years of career history and the dates you obtained your O Levels! The next thing I look at on a CV is I scan your employment history – so in my mind I like for this to fall underneath the Personal Details. I scan initially to see if you have the previous experience that I need for the role – if I have stated that I need for you to have 5 years recent silver service experience then I can very quickly see if you have or not. If your experience is the last 20 years is in the banking industry and you have never worked in a restaurant in your life then you will be quickly discounted before I have even looked at your personal profile, cover letter or the rest of your CV. So this goes back to my earlier point of only applying to roles that you are suitable for. Because I scan the employment history first, it needs to be clear. So by glancing at it I need to quickly see your job role, place of work and dates of employment then with your responsibilities listed underneath. I do not need to see 25 years of employment history, I would suggest maybe the last 5-10 years; unless you have been in the same role for that long then perhaps pop your previous employer on but with a much briefer explanation of the role. If you have the right level of experience then I will go through the CV in more detail and move on to read your personal profile. This should just be a few sentences to explain your current situation – not in terms of your job as I have read about that already – but in terms of why you are looking for a new role, why in France, why in this particular industry. Just so I can understand better why you want this job at this present time.
Lastly, regarding your CV, please be sensible and keep it to a couple of pages (absolute max 3 pages) and a sensible font. I have read a CV which has been in font 20 and it was about 8 pages. Please also don’t think it is ‘cool’ to write it in Cosmic Sans – I don’t know why anyone would want their CV to look like a child has written it?!

Follow Up

Once you have applied I would always suggest following it up. So after maybe 24 hours call the recruiter if a number has been provided to see if they have had a chance to look over your application yet. Sometimes the recruiter will have had a chance to look and you have the benefit of building that report with the employer which will help your chances when the recruiter is shortlisting. If the recruiter hasn’t yet had a chance to look then they may be able pull your application out of hundreds and take a look there and then. It will also show to the employer that you are specifically interested in employment with that particular company by taking the time to call.

Interview Stage

If you are offered an interview then appreciate that you have been chosen over hundreds and make the most out of the opportunity. You must PREPARE. I think some people think that as it isn’t an office job then they don’t need to make such an effort. You do. I would expect interviewees to know the company inside out, know the resorts they operate in, know some of the chalet names that got their attention, know the service that they offer, know the job description exceptionally well, know the competitors and know the other roles within the company so they can see where they slot in the company. This is your opportunity to really understand the company and role and if you are prepared you can really benefit for having that one on one time with the HR Manager. It is your chance to see if this is really for you as well as us seeing if you are suitable, interviews are always a 2 way thing. Know where the interview is taking place so you are not stressing out on the day and be slightly early. Although this is ‘just a winter job’ I would still expect you to dress smartly. There is no such thing as being over dressed for an interview. Have questions prepared and written down. Then if all of them are answered during the interview then at least the interviewer can see that you have 10 or so questions prepared in front of you.
Something that is a personal preference of mine and may not be to everyone’s liking is to receive and email from the interviewee later in the day or the following day thanking me for my time. A little does go a long way and it means a lot to me when I get a personal thank you for my time.
Skype interviewing seems to be becoming more popular with those recruiters who are based out in resort. I personally feel it important to meet face to face but do completely appreciate that this is not always possible for some recruiters. Treat your Skype interview as a real interview, by this I mean be prepared, be early and be dressed smartly. Laying in bed having just woken up and using your phone is not acceptable! Be sat somewhere sensible, with good lighting so that the recruiter can clearly see you. Be aware of things in the background that they can see, e.g. a glass of wine or a poster with swearing on the back wall are not things we want to see. Have a test conversation with a friend a few minutes before your call to ensure that the sound, microphone and camera are all set up and working well. Then just treat it exactly the same, have questions prepared in front of you, pen and paper to take notes ready and remember to turn your phone off.

After a Job Is Secured

Please don’t think you’re invincible after an offer is made. Many companies will then reference you. If any of your references are unsatisfactory then your offer will be retracted. In the run up to the start of the season it is good to be proactive, so return your signed contract and completed paperwork in a timely manner and pay your commitment deposit quickly. It is then nice to stay in touch with the employer in the run up to the start of the season.
When you arrive in resort ready for training, with most companies you are on a probation period which basically means that they are legally able to send you home if you are not meeting their expectations. So although you have successfully passed the interview stage and an offer has been made you are still required to perform well throughout training and then continue to keep up the standards throughout the season.
The training period is a great opportunity for you to shine and been noticed by management – but make sure it is for the right reasons. You are constantly being watched and assessed throughout a training program so it is important to participate in sessions, be punctual, smartly presented, proactive, asking questions and generally proving to the client that they did the right thing in offering you the job. So make the most of the opportunities given to you, appreciate being in the mountains and have a great season.

Thought for the weekend . . . .

Any ideas where the most popular resort in the WORLD is?

 . . . . . This resort saw an increase in the number of skier days by 5% last season bringing the total number to 57.9 million!!!

This is one million more than the USA . . . .

Any ideas?

The answer is France!!

Last year France leapt into the lead overtaking both Austria and the US.
France is set to have another popular season with searches for 'Ski France' steadily increasing above other nations.

Reasons contributing to France being the most popular ski resort in the world?

- Great value ski passes, access to a huge ski area for relatively low cost
- High number of large connected ski areas, ski areas such as Val d'Isere are quite unique to France
- Ease of travel, four major airports for the Alps, sub 10 hour drives from the UK and even a high speed rail link from London.

Pumpkin Competition

So in the name of all things trick or treat Silver Swan are hosting a Pumpkin competition!!!
We would like to see all your amazing pumpkin designs tonight and the winner will be drawn tomorrow.
We will be giving away x2 tickets to the ski and snowboard show at Earls Court this weekend for the lucky winner!!

I will be posting mine later (although I cant choose my own) here is one from last year which was rather inventive . . . .the crazier the better!!


Ever imagined yourself on TV? . .

Now this isn't something Silver Swan specialises in however we have been approached by a TV casting company to see if any of you guys out there would be interested.

What is the deal? . . . 

We are specifically looking for single men aged 20-45, who have good/amicable relationships with their ex's, to take part in a new dating show pilot. The show will focus on the male looking for love.

Doing a ski season is a very close knit environment where the individuals spend a lot of time together and inevitably relationships and friendships form. Therefore past/ current seasonnaires may fit the description  . . . . 

Participants will be paid expenses and this is a great opportunity for individuals to have fun and look for love. As the show is a pilot, it will not be made for broadcast and will involve roughly only one day of filming. (TBC)
